This is an unusual and hard to find collection of Caribbean-inspire recipes.Β Cynthia Rose Keeton lived in the Caribbean for over twenty years, working as a private charter chef on board luxury liners charter yachts around the Virgin Islands, serving clients a taste of the local cuisine.Β Β The recipes are simple, with an emphasis on a low number of ingredients and easy techniques, designed to be workable in small boat galley, often offering alternative methods and constructions, yet they capture the full flavour of the Caribbean - from Cinnamon Pancakes to chilled papaya soup, from swordfish kebabs to cocktail crab claws, banana foster crepes to lobster with rum runner sauce.Β Cynthia returned to the US mainland in 2009 but continued wrote and blog, developing a real following on line.Β Fine Fare with Flair was her only cookbook although she also published some anecdotal stories of her time in the Caribbean - Hurricanes and Hangovers and Other Tall Tales; and Loose Lies from the Coconut Telegraph.
